Climate: Continental, with dry and hot summers and mild snowy winters.
Terrain: Very hilly vineyards facing South above 210 m. asl
Soil: A diverse geological soil composition, consisting mainly clayey and marlstone. The vineyards spread out over the finest wine-growing sites on the hill slopes between river Sava in Krka in South-East Slovenia.
Farming: Environmentally friendly based on monitoring of conditions. As minimal as needed, only with substances approved for sustainable farming.
Fermentation: Wild fermentation for 4 days (before the harvest a smaller quantity of most ripe grapes are brought into cellar and left to start fermenting on its own, after that, the harvest begins and the grape must is put together with the wild fermentation to begin the main process of fermentation), 2 days of maceration under controlled temperature in stainless steel. Wine fermented using exclusively native yeast from wild fermentation.
Bottling and Ageing: Stainless steel, bottling without filtration as late as possible before putting on the market. Consumption in max 30 months after harvest.
Tasting Notes: Our idea behind full circle wines is to return to the ancient wine making traditions and old school wines our region was known for in the Middle Ages. Fermented with no added yeasts and bottled without filtration, these wines truly represent the terroir of Dolenjska. Cviček is a unique red and white wine blend of controlled origin and composition and is product of minimal intervention winemaking.
Playful berry aromas, with scintillating notes of cherry and raspberry constitutes the embodiment of its lightness and freshness. Youthfully bashful with a polished acid.
Serving Suggestions: Goes beautifully with almost all dishes, but crazy good with pork bbq, grilled meat and sausages, and Thanksgiving dinner. Don't you dare serve this unchilled.
