Soil: Deep calcareous marl, layers of sandstone and flint

Variety: Žilavka, traditionally planted as a field blend with a small percentage of local varieties as Bena and Krkosija, to complement with the acidity, must yield.

Fermentation: Depending on ripeness and vineyard site, the grapes are either direct berry pressed or whole-cluster pressed to a cold soak (maceration) overnight. All fermentations occur in stainless steel and remain on fine lees for 6-8 months with occasional battonage.

Tasting Notes: This wine is clean, fresh, and pure example of the Žilavka grape. Very bright with lots of sunshine, honeydew, stone fruit, salted grapefruit, and balancing acidity with touches of chalky minerality and a subtle bitter almond on the finish.
