Vineyard: Traditional terraced vineyards, south exposure, 130-150m altitude. Density 5.500-6.000 vines/ha, short spur pruning, average yield 40-50 hL/ha
Soil: Deep calcareous marl, layers of sandstone and flint
Variety: Žilavka, local native variety of Hercegovina, interesting historical parentage with one known parent (Alba Imputotato x unknown), very resistant to drought and medium sensitivity to fungal diseases.
Fermentation: Hand picked selected grapes, berries fermented in open vats after gentle destemming, regular manual cap punchdown, ambient temperature control, spontaneous wild yeast fermentation with prepared pied de cuve starter from the same vineyard, 15-20 days fermentation with maceration, gentle pressing and immediate transfer to neutral oak barrels with as much yeast sediment as possible, natural malolactic completed, winemaking aimed to obtain natural spontaneous microbial stability: clean healthy grapes, good acidity and fruit freshness at harvest, avoiding high alcohol and difficult fermentation. No S02 additions.
Ageing: 6-8 months in neutral used 225L oak barrels, no fine lees stirring
