Climate: Continental cool climate, snowy and cold winters, sunny and mild spring, with sun-drenching summers.
Terrain: Continental micro-climate on the steep hills and valleys of Klokočovnik, located between two beautiful villages of Loče and Žiče in northeast Slovenia. All vineyards are located on intensely steep hills between 30% to 49% slope with southern exposure, ranging from 350 meters to 480 meters above sea level. Nights are refreshingly chilly.
Soil: White marl/limestone - most of it being fine grains known as “lapor” - with some rocky soil.
Farming: No irrigation in the vineyards and farming in accordance to Slovenian integrated farming. Spraying is minimal during the vintage and limited to copper and sulfur.
Vinification: Hand harvested in the last week of September. Grapes are de-stemmed into small open casks. Gentle pressing precedes native yeast fermentation under low temperature. Grapes are fermented separately and macerated for 25 days in open tanks at low temperature. Maturing of wine is done in 300 L Slavonian oak used barrels for one year.
Tasting Notes: This wine, Ottokar, was named after a local legend in the village of Žiče, which speaks upon the rich history in viticulture dating back to Carthusian monks settling here in the 12th century. There is a legend of the Duke (Ottokar III) who came to this area searching to build a monastery and had a vision that brought him through the mountain. After falling asleep in the shade of a hollow on a hot summer afternoon, he was awoken by a white rabbit whom inspired him to proclaim that this was the area to build his monastery and plant their vineyards.
An ode to the spiritual journey that the bunny led the Duke on, ‘Ottokar’ is an otherworldly macerated blend of the French grapes that now call the hills of Štajerska their home --- made with Pinot Gris, Sauvignon Blanc and Traminer. The wine explodes with vibrant aromas of apricot marmalade and tangerine and notes of hay and pine. Salty texture and chewy palate, this wine is fresh yet expressive, with lively acidity, depth, and a long pleasantly bitter finish. This wine has been known to invoke revelations!
