Soil: Rich flysch soils (sediments of an ancient ocean) manifested as layers of clay, marl, limestone and sandstone
Farming: Strictly organic in practice
Vinification: Hand-picked grapes, spontaneous fermentation with no additions, macerated on the skins for 14 days. Fermented and matured in stainless steel for 1 year.
Notes: Unlike the powerful whites that hail from Brda, Merlot and Cabernet are international varietals that can find nuance and balance in this region, offering tremendous elegance for these otherwise hefty varietals.
The wine immediately shows a deep purple color with youthful and energetic aromatics packed with an abundance of vibrant dark red fruits such as dark cherry and ripe raspberry. On the palate, it is juicy with a dry profile, yet great acidity and framed within a medium body and moderate tannins and a touch of minerality on the finish. A truly lovely young Cabernet Sauvignon full of character and energy.
This is a perfect cool weather sipper or a grill master’s best friend: enjoy alongside boar salame, wild game, and grilled sausages.
