After. the wine undergoes spontaneous fermentation and is allowed to ferment naturally - 90% in 2,000L Slavonian oak barrels. The wine undergoes an extremely slow natural fermentation, and not starting malolactic fermentation until early the following year (2022). The wine is aged for 12 months and then bottled with very little sulfur additions.
Tasting Notes: For Tomislav and Martina Tomac, there is nothing more important in winemaking then the soil (rocks) and the cosmic movements of nature (stars) which inspired the name of this wine, Rockstar.
The key for Rockstar is to produce a Riesling that speaks of Pleševica terroir. They have a region that achieves the natural perfect balance of ripeness along with high acidity. They are not trying to be Rheingau, Wachau or Alsace, but to show that the pure and true expressions of this region command uniquely superb wines of authenticity.
