Climate: Mild Mediterranean, with dry and hot summers, and mild winters.
Terrain: These coastal vineyards are located right on the Adriatic sea, more specifically the Gulf of Trieste, near the Slovenian port of Koper. They enjoy significant day-night temperature swings and constant seaside breezes. The soil here consists of eocene flysch with marl and sandstone.
Farming: No irrigation. Environmentally friendly cultivation, following the integrated farming guidelines of Slovenia.
Vinification: Malolactic fermentation took place immediately after the alcoholic fermentation. The wine was partially matured in large 4,000-12,000 liter oak barrels and partially in stainless steel tanks, then blended and coarsely filtered before bottling.
Tasting Notes: Istria is famous for its amazing local grape varieties, but it also produces great medium-body, food-friendly cabernets! This cab has bright fruit and plenty of vegetal complexity. Aromas of cherry, blackberry and plum along with green pepper and licorice lead to a friendly palette with soft tannins and ample acidity.
Pair it with casual fare, bring it to a BBQ! It will go nicely with burgers, ribs, sausages, kebabs, beef stews and also pizza, lasagna and stuffed peppers!
