Climate: Continental cool climate, with snowy and cold winters, and sunny and mild spring, with sun-drenching summers.
Terrain: Continental micro-climate on the steep hills and valleys of Lipoglav, located by the beautiful town of Loče in northeast Slovenia. All vineyards are located on steep 45˚ slopes with southern-exposure, ranging from 100 meters to 480 meters above sea level. Nights are refreshingly chilly, as the winds whip around the sharp hills and valleys. The soil made up of marl, clay and sand.
Farming: No irrigation. No herbicide. Environmentally friendly and sustainable viticulture, with respect for the land.
Vinification: Hand-picked, destemmed but not crushed, and fermented in open-top tanks with no added yeasts. Pressed after primary fermentation and bottled unfiltered after spontaneous malolactic fermentation.
Tasting Notes: Taking on a different expression of the Štajerska cool climate varietals, Pollinator takes Pinot Noir to another refreshing dimension, with this coferment of Pinot Noir, Sylvaner and Pinot Gris. Co-fermenting these three varieties results in fun wine with the elegance of playful red fruits of Pinot noir, along with the bright and zesty freshness of Sylvaner and Pinot gris. Delivering a bright cranberry nose with fresh chopped herbs and surprisingly complex palate filled with summer strawberry, black cherry with refreshing mouthwatering acidity. Serve with a chill and enjoy with Korean bbq pork, grilled miso-soy Salmon, or ever-so-easily on its own!
